I love Dark French Roast coffee and chicory as made by Cafe du Monde and French Market coffee. Of course, I grew up in New Orleans, so this is what I've been drinking for about 25 years now. This is the original New Orleans cafe' au lait. The chicory (root of the endive plant, roasted) helps to cut the bitterness of the dark roast, but adds a subtle chocolaty flavor, without killing the taste of the coffee itself.
If you've never had it, do yourself a favor and give it a go. Traditionally, it's brewed very strong, but served half-coffee, half-hot-milk.
1. Buy it in the can (YES! a CAN!) from the grocery store if they have it, or order it online from Cafe Du Monde in New Orleans, LA. http://shop.cafedumonde.com/coffee.html
2. Use the best-tasting water you can afford. Usually, this is tapwater, run through a filter if there's a high mineral content near you.
3. Use a french press. I use 1 and a half tablespoons to a cup of water. Get the water just under boiling before you pour it on the ground coffee. Stir and let sit for 4 minutes. Press slowly.
4. Pour in half coffee, half heated whole milk, preferably into a thickly-walled ceramic mug. This lets the coffee cool slightly by heating the cup. Teaspoon of sugar.
5. Sit on the porch and talk to your neighbors while you have one of the finest traditions to come out of the French civil war.
